Maple-Cinnamon Apple Muffins

These muffins make for an easy fall breakfast!

  • 1/2 cup maple syrup raw
  • 1 stick unsalted butter melted
  • 2 eggs large
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 cups flour all-purpose
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon ground
  • 1/2 tsp nutmeg ground
  • 1/2 tsp salt
  • 2 cups apples peeled and diced

Cinnamon Sugar Topping

  • 4 tbsp butter melted
  • 1/4 cup cinnamon ground
  • 1/4 cup sugar granulated


  1. Preheat oven to 350 degrees.

  2. Mix together melted butter (at room temperature), eggs, vanilla, maple syrup, and milk.

  3. In a separate bowl, mix together flour, baking powder, salt, cinnamon,  and nutmeg. Combine the wet ingredients into the dry ingredients. Fold in the apples to this mixture.

  4. In a greased and floured muffin tin, pour equal amounts in to fill the tins 3/4 of the way full. You should have 12 muffins from this batch. 

  5. Bake for 30 minutes and let rest in the muffin tin for 10 - 15 minutes after removing from the oven.

Cinnamon-Sugar Topping

  1. While the muffins are baking, melt butter in a separate bowl and mix together the cinnamon and sugar on a separate plate. 

  2. Once the muffins have cooled completely, dip the muffins into the butter first and then roll them into the cinnamon-sugar mixture.
