These muffins make for an easy fall breakfast!
Preheat oven to 350 degrees.
Mix together melted butter (at room temperature), eggs, vanilla, maple syrup, and milk.
In a separate bowl, mix together flour, baking powder, salt, cinnamon, and nutmeg. Combine the wet ingredients into the dry ingredients. Fold in the apples to this mixture.
In a greased and floured muffin tin, pour equal amounts in to fill the tins 3/4 of the way full. You should have 12 muffins from this batch.
Bake for 30 minutes and let rest in the muffin tin for 10 - 15 minutes after removing from the oven.
While the muffins are baking, melt butter in a separate bowl and mix together the cinnamon and sugar on a separate plate.
Once the muffins have cooled completely, dip the muffins into the butter first and then roll them into the cinnamon-sugar mixture.
